George Ellis works primarily as a Conductor and Musical Director. In 2000, he conducted the Sydney Symphony Orchestra and the Millennium Choir in front of 110, 000 people and a live viewing audience of 3.8 billion people at the Opening Ceremony of the Sydney Olympic Games. He also conducted at the closing ceremonies of the Sydney Olympic and Paralympic Games.

As a conductor, Ellis has worked at a diverse range of events including the Davis Cup Tennis Tie, the NSW Government's official Australia Day Ceremony, the 2003 ARIA awards, and the Suzuki International Conference, and has worked with distinguished soloists such as David Hobson, Simon Tedeschi, Alex Lloyd, Mark Williams, Joan Carden, Jenny Morris and David Campbell. He has conducted the Millennium Choir in performance with Grace Knight, Peter Cousens, John Paul Young and Mark Williams, and the Sydney Youth Orchestra in performances with Caroline O'Connor, Sydney Symphony Orchestra's principal oboist Diana Doherty, Opera star Deborah Reidel, ARIA Award winner Jimmy Little and legendary rock group GANGagang.

Ellis was Musical Director for the Athens Olympic Torch Relay Events. He was also Musical Director for the world premiere of the opera Auf Wiedersehn Lulu, Associate Musical Director for the 2002 national touring production of Man of La Mancha featuring Anthony Warlow and Caroline O'Connor, and, in 2003, Musical Director for the Australian Youth Choir in Sydney. In 2002, he was appointed Musical Director of the Sydney Opera House Children's Proms series for which he composed and arranged all music.

In 2003, Ellis completed and recorded the string and vocal arrangements for one of Alex Lloyd's CD.

Ellis has taught Singing and Performance in the Open Program at top drama school NIDA, and regularly teaches at the Sydney Conservatorium of Music Open Academy. His work with the Sydney Opera House Proms Orchestra and the Millennium Choir continues.

In 2006, Ellis conducted and presented concerts for the Sydney Festival and was Musical Director for the NSW Premier's Australia Day Lunch where he worked with Caroline O'Connor, Simon Burke, Deborah Conway and Clare Bowditch. He was also appointed Musical Director of the Commonwealth Day Ceremony where he conducted Anthony Callea for The Prayer for Queen Elizabeth II. He has just completed orchestrations for the Denmark Radio Symphony Orchestra and has recently appeared on Channel 9 conducting the Sydney Opera House Babies Proms Orchestra.
